There's not a whole lot to do in the immediate vicinity of SAP Center, not gonna lie. If you don't mind walking 7-8 blocks East, you can visit The Tech Museum of Innovation as well as some hotels and restaurants.

There really isn't anything to see around the stadium. The Sharks haven't won many championships and there isn't much to do in San Jose outside sports.
